# Step-by-Step Instructions:
01 - Mix the diced mango, sliced green onions, jalapeño if using, and chopped cilantro together in a medium mixing bowl. Season lightly with salt and pepper.
02 - Lay each flour tortilla flat and evenly distribute half of both Monterey Jack and cheddar cheese over one half of each tortilla.
03 - Spoon the mango mixture over the cheese, then sprinkle the remaining cheese on top. Fold each tortilla in half to form a semicircle.
04 - Melt 1/2 tablespoon butter in a large skillet over medium heat. Add one or two folded quesadillas and cook for 2 to 3 minutes per side, until golden brown and the cheese is melted. Repeat with remaining butter and quesadillas.
